Core the apples and cut into 8 equal wedges
Melt the butter in a pan and add the apples
Cook gently for 2 minutes until the apples soften, turning occasionally
Add the honey and allow to heat through, coating the apples evenly
Slice the french stick on the diagonal, 2 pieces per person, about 2 cm thick
Lay bread slices on an ovenproof tray and drizzle with the olive oil
Bake in the oven for 10 minutes until lightly toasted
Slice the goats cheese into discs
Arrange the apple and goats cheese alternately on top of each slice of bread
drizzle over any butter/honey left in the pan
return to the oven for 5 minutes or until apples start to caramelize slightly and goats cheese starts to melt
Arrange on a serving plate, drizzle with balsamic syrup and enjoy
