Brochettes

Ingredients
  

  • 400 g turkey breast diced
  • 10 g chopped fresh coriander
  • 10 g chopped fresh parsley
  • 1 ½ tbsp olive oil
  • 1 ½ tbsp lemon juice
  • 2 tsp salt
  • 2 tsp paprika
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp ground ginger
  • 1/2 tsp ground turmeric
  • ½ tsp ground cumin
  • 1 clove garlic pressed

Instructions
 

  • Make the marinade – mix together the parsley/coriander, oil, lemon juice, salt, paprika, pepper, ginger, cumin, turmeric, (saffron, if using), and garlic
  • Marinate the diced meat for 1 ½ hours
  • Thread on to skewers and cook on the BBQ or under the grill.
