Instructions
Place the potatoes in a large saucepan and cover with cold water. Add a generous pinch of salt.
Cover and bring to the boil. Reduce the heat and simmer for approximately 15 minutes until the potatoes are tender and easily pierced with a sharp knife.
Drain well and allow to cool.
Mix together the mayonnaise, horseradish, mustard, lemon juice and spring onions in a bowl.
Mix in the cooled potatoes and season to taste. Transfer to a serving dish.
