Potato Salad With Lemon and Horseradish

A classic potato salad with a little kick of horseradish

Ingredients
  

  • 300 g New potatoes Cleaned and cut into bite size pieces
  • Sea salt to taste
  • 100 ml Homemade Mayonnaise or a good quality shop-bought version for ease
  • 1 tbsp Horseradish sauce
  • 1 tbsp Dijon mustard
  • 1 tsp Freshly squeezed lemon juice
  • 80 g Spring Onion finely sliced
  • Freshly ground black pepper to taste
  • Chopped chives to garnish

Instructions
 

  • Place the potatoes in a large saucepan and cover with cold water. Add a generous pinch of salt.
  • Cover and bring to the boil. Reduce the heat and simmer for approximately 15 minutes until the potatoes are tender and easily pierced with a sharp knife.
  • Drain well and allow to cool.
  • Mix together the mayonnaise, horseradish, mustard, lemon juice and spring onions in a bowl.
  • Mix in the cooled potatoes and season to taste. Transfer to a serving dish.
  • Scatter with the chopped chives.
