Apple, Honey and goats cheese Crostini
Where are we now?
When we made the decision to go travelling the COVID pandemic wasn’t really a thing. We thought we could just sell up and set off. That wasn’t to be. Lockdown. 4 months on furlough. It didn’t make sense to try and travel over the summer so we ended up at Blackpool Sands in sunny South Devon. Despite being busy in the cafe, there was plenty of time to work on recipes.
Summer turned to autumn, as it always does. The sun kept shining. Another lockdown. And we’re still here in December. Hopefully not for much longer.
The fresh British apples on the trees reminded me of this recipe. Fresh apples, soft goats cheese and blossom honey make this crostini a delicious autumn snack or starter.

Apple, Honey and Goats Cheese Crostini

Ingredients
- 2 Apples any eating apple variety works
- 20 g Butter unsalted
- 200 g Soft goats cheese
- 2 tbsp Honey Blossom
- 1 French Stick
- 50 ml Olive Oil Extra Virgin
- Balsamic Syrup To Serve
Instructions
- Core the apples and cut into 8 equal wedges
- Melt the butter in a pan and add the apples
- Cook gently for 2 minutes until the apples soften, turning occasionally
- Add the honey and allow to heat through, coating the apples evenly
- Slice the french stick on the diagonal, 2 pieces per person, about 2 cm thick
- Lay bread slices on an ovenproof tray and drizzle with the olive oil
- Bake in the oven for 10 minutes until lightly toasted
- Slice the goats cheese into discs
- Arrange the apple and goats cheese alternately on top of each slice of bread
- drizzle over any butter/honey left in the pan
- return to the oven for 5 minutes or until apples start to caramelize slightly and goats cheese starts to melt
- Arrange on a serving plate, drizzle with balsamic syrup and enjoy
