Brochettes are ‘skewers’, and describe the form of a dish or the method of cooking and serving pieces of food, especially grilled meat or seafood, on skewers.

Brochettes are a beloved street food that can be found throughout the vibrant country of Morocco. These skewered delights are a staple of the local cuisine and are usually served simply with bread.

The meat used in brochettes can range from turkey, chicken, lamb, to beef, but anything that can be threaded onto a skewer is considered fair game.

Brochettes marinade

What truly makes brochettes unique is the marinade. Every household has its own special blend of herbs and spices that have been passed down through the generations. The marinade usually consists of a variety of spices that can include cumin, paprika, coriander, saffron, and many others. Brochettes

Ingredients
  

  • 400 g turkey breast diced
  • 10 g chopped fresh coriander
  • 10 g chopped fresh parsley
  • 1 ½ tbsp olive oil
  • 1 ½ tbsp lemon juice
  • 2 tsp salt
  • 2 tsp paprika
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp ground ginger
  • 1/2 tsp ground turmeric
  • ½ tsp ground cumin
  • 1 clove garlic pressed

Instructions
 

  • Make the marinade – mix together the parsley/coriander, oil, lemon juice, salt, paprika, pepper, ginger, cumin, turmeric, (saffron, if using), and garlic
  • Marinate the diced meat for 1 ½ hours
  • Thread on to skewers and cook on the BBQ or under the grill.
