Kefta

Kefta, cooked in the tagine in a spicy tomato sauce.

Kefta is a mix of minced meat, usually beef or lamb, or a mixture of the two, heavily spiced with traditional spices and fresh herbs.

A popular Street Food in Morocco

Kefta can be found all over Morocco. It is a hugely popular Street Food. It can be used in several ways.

Most commonly, it is simply formed into tiny patties and simply cooked on a griddle and served with fries. Alternatively, it might be pressed onto skewers, known as brochettes, and cooked under the grill.

It can also be cooked in a tagine. Cooked in this way tomatoes, onions, garlic and spices are placed in the tagine along with small meatballs formed from the kefta mix.

Kefta

A simple mix using minced lamb or beef which can then be used for a number of different applications – simply grilled on a skewer (brochette), made into small meatballs and cooked in a tagine with tomatoes and onions (kefta tagine), or made into small pattys and simply cooked in a pan or on the bbq.

Ingredients
  

  • 500 g. finely ground beef or lamb with some fat content, not lean. 10% is fine. - or a mix of the two
  • 100 g red onion - finely chopped
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh coriander
  • 1 tbsp chopped fresh mint leaves if using lamb
  • 1 tsp Ras Al Hanout

Instructions
 

  • Mix all the ingredients together
