A classic potato salad with a little kick of lemon and horseradish
Inspired by the seasonal mackerel run at Blackpool sands
Mackerel are a migratory fish which swim in large shoals near the surface. During the winter season, the fish live near the seabed off the southwest coast of Norway, and in this period they eat very little. This changes between April and May, when the mackerel swim to the central parts of the North Sea to spawn. They usually arrive in our waters around late spring and leave early autumn.
Talking to Bert,a retired Michelin trained chef who now works the gate for a bit of splash money, the Mackerel usually come into this area around May/June time. This year was no exception.
It was these summer mackerel that reminded me of this potato salad with lemon and horseradish recipe.
The Recipe
Potato Salad With Lemon and Horseradish
Ingredients
- 300 g New potatoes Cleaned and cut into bite size pieces
- Sea salt to taste
- 100 ml Homemade Mayonnaise or a good quality shop-bought version for ease
- 1 tbsp Horseradish sauce
- 1 tbsp Dijon mustard
- 1 tsp Freshly squeezed lemon juice
- 80 g Spring Onion finely sliced
- Freshly ground black pepper to taste
- Chopped chives to garnish
Instructions
- Place the potatoes in a large saucepan and cover with cold water. Add a generous pinch of salt.
- Cover and bring to the boil. Reduce the heat and simmer for approximately 15 minutes until the potatoes are tender and easily pierced with a sharp knife.
- Drain well and allow to cool.
- Mix together the mayonnaise, horseradish, mustard, lemon juice and spring onions in a bowl.
- Mix in the cooled potatoes and season to taste. Transfer to a serving dish.
- Scatter with the chopped chives.
